A. Single-bevel knives are designed specifically for right-handed or left-handed users. They are ideal for delicate Japanese culinary techniques and slicing raw fish with a beautiful, clean surface. Double-bevel knives can be used equally well with either hand and are versatile for everyday tasks involving meat, vegetables, and fish.
A. Knives made of carbon steel (such as Shirogami/White Steel and Aogami/Blue Steel) offer exceptional sharpness, but they tend to rust if left with moisture, salt, or acidic food residue. After use, please wash them immediately, wipe off all moisture completely, and store them in a dry place.
