Cutting Precision and Effortless Maintenance: Yanagiba Sakimaru Ginsan 300 mm.
Hand-forged by certified master craftsman Shogo Yamatsuka, this 300 mm Yanagiba Sakimaru represents the pinnacle of craftsmanship and prestige for expert sushi and sashimi preparation. Crafted from high-carbon Ginsan (Silver 3) stainless steel, it delivers the razor-sharp edge and edge retention of traditional carbon steels, paired with the easy maintenance of a rust-resistant blade.
Master Yamatsuka applies precise heating cycles and expert hand-hammering to refine the steel’s grain structure at a microscopic level. This process results in extraordinary durability and an effortlessly smooth slicing action.
Featuring an elegant Japanese katana-style curved tip (Sakimaru) and a generous 300 mm blade length, it allows you to slice through large fillets in a single, uninterrupted stroke. Its traditional single-bevel profile (Kataba) with a concave back (Urasuki) prevents damage to the delicate fish fibers and keeps slices from sticking, ensuring brilliant, mirror-smooth cuts. Completed with a luxurious octagonal ebony handle and a rare white buffalo horn ferrule, this knife provides exceptional balance and comfort in the hand.
